Belfast Wheaten Bread from Aileen, Belfast, Northern Ireland

Ingredients

  • 350g Wholemeal flour
  • 100g pain flour
  • 300ml buttermilk
  • 1 heaped teaspoon Bicarbonate of Soda (baking powder)
  • 1 teaspoon salt
  • 1-2 teaspoon sugar (to taste)
 
 

Method

Preheat oven to Gas 6 or Edectric 200C.

Sift flour, salt , sugar and bicarbonate into a basin

Stir in the buttermilk and form a ball with the mixture

Press the ball onto a greased baking tray and cut a deep cross (quarter).

Bake for 30 minutes in the centre of oven (when ready should sound hollow when tapped on bottom)

If you prefer you can make scones from this mixture - baking for about 12 minutes at the same temperature.
